Cheddar Semolina Bread
Ingredients:

3/4 cup plain or potato water
2 tablespoons unsalted butter or canola oil
3/4 cup shredded cheddar cheese
1/2 cup mashed boiled potato
1/2 cup unbleached all-purpose flour
1 1/2 cups semolina flour
1 tablespoon sugar
1/4 teaspoon salt - (to 1/2 tspn) -- or to taste
1 1/2 teaspoons active dry yeast

Place the ingredients in the bread pan in the order recommended by your
machine's manufacturer. Process on the appropriate cycle.

This recipe yields a 1 1/2 pound loaf.

Comments: A light bread with a subtle taste of cheese, achieves maximum
flavor when just cooled to room temperature. Slightly nutty accent.
Potato adds lightness and keeping quality.
