Black Bun
Ingredients:

1 3/4 cups milk -- plus
3 tablespoons milk
4 cups bread flour
1/2 teaspoon salt
1 1/2 cups butter -- softened

2 cups currents
2 cups raisins
1 cup prunes -- stoned
1 cup figs -- chopped
6 tablespoons orange marmalade
1/2 cup slivered almonds
2 teaspoons ground cinnamon
2 teaspoons ground cloves
2 teaspoons ground ginger
1 teaspoon ground cardamom
1/4 cup whiskey
=== GLAZE ===
1 egg yolk
1 tablespoon milk

Place all of the dough ingredients in your machine in the order specified
by your machine's manufacturer. Select the dough cycle and press start.

Mix all of the filling ingredients together and set aside. When the dough
is finished remove the dough and divide dough into thirds, combine two of
the thirds and set aside. You should now have two dough balls, one larger
than the other.

Flatten the larger piece, and lay filling onto it. Knead filling and
dough together until thoroughly incorporated. Roll out smaller dough
piece into a circle. Place bun in center of dough; wrap completely,
drawing together edges in the center of the top with a pinch.

Line a baking sheet with greaseproof paper, and invert bun on to pan
(pinched side down). Cover and allow to rise for 30 to 40 minutes.
Skewer right through bun several times before glazing with mixed egg yolk
and milk. Bake in a preheated 350 degree oven for 2 hours.
