Barley, Spelt, Whole Wheat, Bread
Ingredients:

1 1/2 cups warm water
5 tablespoons dry buttermilk
2 tablespoons sugar
1 tablespoon lecithin granules
1 tablespoon olive oil
1 teaspoon salt
1 cup bread flour
1 cup whole wheat flour
1/3 cup spelt flour
2/3 cup barley flour
1/3 cup barley or bread flour or spelt flour -- your choice
1 tablespoon dough enhancer
1 tablespoon vital wheat gluten
1 tablespoon dry whey - (from dairy cheese processing)
1 3/4 teaspoons active dry yeast

Place the ingredients in the bread pan in the order recommended by your
machine's manufacturer. Process on the Basic or White cycle, Medium Crust
setting.

Near end of first knead make alterations in the liquid/flour ratio if
needed to make a soft moist pliable ball of dough, not too wet, not too
dry.

This recipe yields a 1 1/2 pound loaf.
